Topics to be covered:

  1. World winemaking History;
  2. Wine production in Portugal: main Portuguese wine regions and its grapes varieties and wine styles;
  3. Winemaking steps: harvest, vintage process, aging and bottle up process;
  4. Portuguese wine styles and their food parings; and
  5. Wine tasting: white wines, red wines, sparkling wines and fortified wines.

General objectives:
Winemaking production is one of the most important export contributions for the Portuguese economy, and Portuguese wines are among the most highly awarded wines in the world for their quality and excellency.

The wine cultural traditions on the areas were Portugal was born in the 11th Century go back in time until the 7th Century B.C. The seminar aims to introduce the importance of both the economic and cultural aspects related to the winemaking in Portugal and students will also have the opportunity to taste some Portuguese wines. The Seminar will be delivered in two parts: (i) The first one focusing on the theoretical aspects of the winemaking History in Portugal and its cultural related traditions; (ii) The second one focusing on the practical aspects that will allow the students to know more about the main special  characteristics of the different types of Portuguese wines and their food parings.

Specific objectives in terms of Language and Culture:
In terms of Language, students who will attend the Seminar will have the opportunity to significantly increase their Portuguese vocabulary on special topics related to the gastronomy and beverage cultural areas, as well as on the semantic aspects related to the winemaking traditions and on technical wine production.

In terms of Culture, the students will have the opportunity to acquire more knowledge about Portuguese traditions related to the winemaking process, such as the grapes harvesting, the traditional grapes trodden by foot or the traditional ways of fermenting and aging the different types of Portuguese wines. The students will also know more about the processes to try the Portuguese wines and their food parings, as well as about other aspects related to wine traditions such as wine serving formalities or type of glass wines and right wine pouring portions.
